About Low Carb Diets … and a Recipe

We often hear about low carb diets and how successful they prove to be in losing weight, but what is a low carb diet exactly?

The term “low-carb” means low in carbohydrates of course. Carbohydrates are usually found in foods like pasta, potatoes, fruit, bread and rice. A low carb diet does not entail any specific diet nor does it include well-defined steps to losing weight.

You Don’t Need to Buy Anything But the Right Food to Go Low Carb

It is a rather loose term that varies according to the person who uses it. Some common features though, include consuming foods that are low in carbohydrate and glycemic. The consumption of carbohydrates leads the body to excrete insulin.

As carbohydrates get digested, glucose -the effect of insulin excretion- either gets burned by our body if it we need immediate energy or else gets stored as fat.

More seriously, after consuming a meal that consists mainly of carbohydrates, the level of insulin in our body goes suddenly up and after a short time suddenly down. This effect causes us to be hungry only after 2 or 4 hours from our last meal, leading us to a vicious circle of being hungry, then eating and finally storing fat.

The main ways to define a low carb diet, following the initial question “What Is A Low Carb Diet?”, is to clarify whether you are talking about the actual carbohydrate that an adult consumes daily or about the percentage of the calories in a person’s diet that comes from carbohydrates.

The usual amount of calories from carbs in an adult’s diet is about 50-60 percent. So any percentage of calories coming from carbohydrates that is below that, can be thought of as low carb.

The most common misconception about low carb diets is that people who follow this kind of eating plan are actually striving to consume a zero carbs. That is not only untrue but it is also near to impossible considering that carbohydrates are hidden in most of the food we consume, especially processed food.

A diet low in carbs, as the name itself demonstrates, tries to reduce the carbohydrates to a low level, not eliminate them completely.

Another common myth is that on a low carb diet you don’t eat fruits and vegetables. The truth is that this food category is rich in carbohydrate, but that does not mean you should eliminate them if your going low carb. Carbohydrates from fruits and veggies are exactly the kind of carbs you need.

A low carb diet can help you lose weight and increase your energy. People find themselves to be less sleepy and have better concentration and some cases have shown that people are experiencing a better mood.

Lots of people have noticed an increased metabolic speed as well. That’s a very good thing because it makes losing weight far easier.

For breakfast
oats1 cup of good old oats. Cook them the way you normally would, in a pan or a microwave. It’s best to use regular oat flakes as opposed to quick oats.

Add some Pineapple or Kiwi fruit or some frozen berries

For lunch

A large green leaf salad of your choice
2 Tablespoons of low carb commercial or homemade dressing
Sprinkle with Spicy Sweet Pecans if you like

Afternoon Snack

Cashews20 Plain Nuts. Cashews, almonds or walnuts

2 full cup greens. Things like frozen peas or beans are fine.
2 Tablespoon Cottage Cheese

Jeb Bush Loves Paleo

I have friends who swear by the Paleo diet and they have lost a lot of weight. I haven’t tried it myself because I don’t like to eat meat, a pretty big component of Paleo.

Jeb Bush credited a low-carb Paleo diet for his 40-pound weight loss in six months. Jeb, a former Florida governor who’s running for president of the United States, said regular exercise also helped him slim down.

Republican presidential candidate Jeb Bush, who lost 40 pounds in 6 months, said his weight loss secrets were exercise and a low-carb Paleo diet.

“I’ve lost, by working out and eating right, 40 pounds in six months,” Bush told KCCI Aug. 2. Jeb, whose full name is John Ellis Bush, began following a low-carb Paleo diet at the suggestion of his son, George P. Bush.

Jeb, 62, is so thrilled with his weight loss he urged his son, Jeb Bush Jr., to adopt the Paleo diet. The Paleo diet has a huge celebrity following, including country superstar Tim McGraw, who lost 40 pounds with the low-carb Paleo diet and CrossFit workouts.

The Paleo diet is an alcohol-free eating plan that emphasizes high-quality animal proteins, healthy fats, non-starchy vegetables, and excludes gluten, sugar, dairy, legumes, and processed foods.

The 6-foot-4 Jeb did not say how much he weighs, but he no longer has a chubby face or double chin, and his once puffy stomach is now flat, Celebrity Health & Fitness reported.

Mediterranean Eating … Not Dieting

Mediterranean eating, as practiced by the good people of Greece, Italy and Spain, is not dieting. It is eating well.

A typical diet in these countries includes lots and lots of fresh leafy green vegetables like spinach and red vegetable like tomatoes. It also includes lots of beautiful olive oil, plenty of water and red wine of course, in moderation.

Eating this way consistently will help you lose weight!

Science shows that people who eat this way are less prone to cardiovascular ailments that are generally related to being overweight. Eating this way has also been proven by many scientists to be one of the healthiest on earth. It’s also excellent for losing weight.

Here are some Mediterranean eating basics:


  • Eat plenty of leafy green vegetables like spinach, romaine lettuce, kale or mustard greens.
  • Eat lots of white and purple vegetables like eggplant and cauliflower.
  • Eat lots of red vegetables like lovely and tasty tomatoes.
  • And of course, drizzle them all with olive oil.
  • Eat lots of fruit including olives, figs and dates
  • And fish, salmon, sardines (fresh if possible but canned ones are good too) and herring.

Mediterranean Quinoa Salad

What you need

1 smashed clove garlic
2 cups of water
1 diced red onion
2 cubes of chicken bouillon
1 cup quinoa, uncooked
2 chicken breasts, cooked and cut into small pieces
(Leave out the chicken if you don’t want to eat one. It’s just as good.)
1/2 a cup of olives chopped
1 large diced green bell pepper
1/4 cup of parsley, freshly chopped
1/4 spoon of salt
1/4 a cup of olive oil
1/2 a cup of chopped or crumbled feta cheese

How to make it

Boil the water, bouillon cubes, and garlic in a large saucepan then stir in the quinoa and reduce the heat to medium low.

Cover and let it simmer for 15-20 minutes or until the quinoa is tender and the water has been absorbed.

Remove the garlic clove and discard, pour the quinoa into a large bowl.

Stir in the chicken, bell pepper, parsley, onions, olives, salt, chives, and feta cheese into the quinoa.

Drizzle the balsamic vinegar, olive oil and lemon juice and stir evenly until well mixed.

Serve it hot or cold and enjoy.

This reminds me of an old diet I used to use that worked for me, but it was too hard to stay on the diet and in the end it didn’t work as well as this diet.

It’s important not to skip meals when you’re trying to lose weight this way. It’s the way the metabolic cycle works.
